Over the past few months I have made some life changes and have been eating relatively healthy. I won't lie and say I don't have cheat days. I am always looking for ways to cheat the system and eat things that makes you feel like you're cheating. Enter in, chia seed pudding.

Yes, the same thing that gave hair to clay sculptures is now a popular food in the healthy world. Chia seeds are quite versatile, they're great in smoothies, overnight oatmeal, protein bowls, and a variety of pudding flavors. Last night I grabbed my chia seeds and created this delicious masterpiece that took no time at all to create.

Recently, I have been getting matcha chia seed pudding from this healthy food cafe near my house. However, it isn't exactly cheap and I have a bag of chia seeds at home. There was no excuse for me not to make some. I wanted to make matcha chia pudding, however without having matcha that proved to be difficult. Plus, matcha isn't something found at your run of the mill grocery store and it's not cheap.

I have a huge container of Target brand chocolate whey protein powder at home and instant espresso powder. This gave me the idea to make some chocolate espresso pudding, with the added bonus of using protein powder. Look at me being all resourceful and healthy. (Don't worry a print out of the recipe is below.)

I apologize for the rambling, I hate when I click on recipes and the writer has an entire dissertation before they actually get to how to make it. I have now become one of them. Sorry!

This chia seed pudding is decadent and VERY filling. I ate two servings as a meal and left full. Dividing the recipe into 6 portions will make great snacks. This recipe is all of my own design, I kept figuring out the flavor as I went along like a mad scientist.

You can top the pudding with whatever you would like, I chose KIND Healthy Grains Cinnamon Oat Clusters with Flax Seed. I used about 4 teaspoons on top of my pudding. It was delicious!

Chelsea's Chocolate Espresso Protein Chia Seed Pudding

This decadent chocolate espresso chia pudding will satisfy your sweet tooth while being healthy.

  1. Pour almond milk and chia seeds into a medium sized bowl and whisk
  2. Whisk in protein powder
  3. Whisk in cocoa powder
  4. Whisk in espresso
  5. Whisk in vanilla extract and honey
  6. Continue to whisk ingredients until powdered ingredients are completely dissolved
  7. Divide mixture into 6 wide mouth mason jars
  8. Allow pudding to sit overnight in the refrigerator
  9. Top with optional toppings

NOTES:

Pudding will last about 5 days in the refrigerator.
