It's National Watermelon Day, and we're making pizza!

I like watermelon anyway I can get it. But I also love it in unexpected ways. So, I turn it into a smoothie, a salad, and, yep, even pizza!

Our friends at ShopRite brought over a gorgeous, 12 lb. seedless watermelon that was at the peak of ripeness, along with the ingredients I like to use in my watermelon pizza. So, I thought I'd show you how to make it.

I love this recipe for parties, picnics, and hot summer days.

Here's what you need:

  • watermelon (either whole or pre-sliced, just not chunks)
  • an assortment of fresh berries (your choice)
  • yogurt (I use Greek)
  • honey
  • fresh mint leaves
  • vanilla extract

Some other ideas for watermelon from our friends at ShopRite:

Watermelon Refresher -- Just blend up some watermelon with some ice and add a squeeze of lime. It's nutritious and super hydrating.

Watermelon Caprese Bites -- It's basically traditional caprese salad, but replace the tomatoes with watermelon. Add mozzarella, basil, and a drizzle of balsamic vinegar and you're good to go! I like to make these kabob style.

Watermelon Feta Mint Salad -- Watermelon and feta work really well together. Toss together a few watermelon chunks with a handful of feta cheese, chopped mint, and a few orange slices. It's so good it almost doesn't need dressing, but I squeeze some fresh lime into a bit of olive oil and pour over the salad and it's super yummy.
