
Do Something More Interesting With Corn For Thanksgiving
Shhh...I'm passing along a family recipe, but don't tell my mom. I call this dish 'Cornucopia'! It's a more moist, sweet version of the traditional cornbread, but this one is served best warm! Heather's 'Cornucopia'
What you'll need:
--1 egg
--1 can whole corn
--1 can creamed corn
--1 cup 1/2 fat sour cream
--1/2 cup melted butter
--2 cups shredded cheddar cheese
--1 box Jiffy corn mix
To make:
--mix the whole and creamed corn; add egg; add sour cream; 1 cup of the shredded cheese, and slowly incorporate the melted butter; then add the Jiffy mix. Pour into a 13x9 greased baking pan and bake at 375 degrees for about 40 minutes. Add 1 cup shredded cheese to top and bake 5 more minutes.
