Breakfast is my favorite meal of the day, but sometimes it's hard to make breakfast AND make it to work on time. Instead, I started making my breakfast the night BEFORE.I was weary about trying overnight oats because the appeal of cold oatmeal quite frankly sounds gross to me. When I found myself eating a bag of chips for breakfast, I figured it was time to see what all these healthy food bloggers are raving about.

And WOW, I was surprised at how good overnight oats are!

I found this recipe on Kristine's Kitchen for Strawberry Chia Overnight Oats. If you're looking for a great breakfast option this is it. It has fiber, protein, and carbs and is guaranteed to keep you full most of the morning if you have a snacking problem like I do!

Here's the recipe:

  • 1/2 cup old fashioned oats
  • 1/2 cup of milk (I use unsweetened Vanilla almond milk!)
  • 1/4 Greek yogurt (I substituted with vanilla whey protein powder)
  • 1 teaspoon maple syrup (I use agave)
  • 1/4 teaspoon of vanilla extract
  • 1/4 cup of sliced strawberries
  • 1/2 table of cinnamon (my add-on!)

Mix all the ingredients together into a jar and secure with a lid. Leave the oats in the refrigerator over night, and voila! Breakfast is ready for tomorrow.

I am telling you this has been a life-saver. I have now been eating a proper nutritional breakfast instead of a bag of Cheez-Its from the break room.

It's also better than grabbing a Sizzli from Wawa (although I still love you!).
