Mike's Traditional Family Birthday Cake

3 cups flour

2 teaspoons baking soda

2 teaspoons salt

2 cups sugar

6 Tablespoons cocoa (not the drink mix)

2 Tablespoons vinegar

2/3 cup of vegetable or olive oil (I always put a tad more, to make the cake more moist)

2 Tablespoons vanilla

2 cups water

Mix the dry ingredients together with a whisk, Make sure the baking soda is NOT in little lumps, or it will be bitter.

Add the vanilla, oil and vinegar. Mix in the water and stir together.

Bake in a 9x13 inch pan at 350 degrees for 35-40 minutes or until a toothpick inserted in the middle comes out clean.

***No need to grease and flour the pan, just pour in the batter.

After baking and allowing the cake to cool, heap on vanilla frosting. You can use whatever flavor frosting you like, but traditionally in our family, it is vanilla frosting. Pillsbury or Duncan Hines works best.
